Long Island Beekeepers Club Monthly Meeting Minutes, August 17, 2008
Suffolk County Farm, Yaphank

• Roughly 30 attendees wished newlywed beekeepers Joanne and Jim all the best!
• Beginner’s Beekeeping Class began today. Next class: Thursday, September 18 in Smithtown, details to be announced. Rich Blohm’s email: beebizz@msn.com.
• We need more bee-related raffle prizes.
• Next meeting is the “informal” September 21st Pig Roast @ 3 PM… Remember, we’ll have a tote board where you can post how much honey you collected this year.
• Today’s presentation was by Jim Fischer, speaking about “creamed honey,” the magical alternative to all manner of messy liquid honey.
• Jim described in detail the “Dyce Method” (Cornell U.) for producing creamed honey, basically a controlled crystallization process.
• Major steps in the process are: Fine filter, Careful heat, Rapid cool, Mix in seed crystals, Settle and Keep Cool for 2 weeks.
• Jim reminded us that both time and higher temperatures will cause honey to lose its flavor.
