Whiskey and Clove Honeyed Ham

We made a spiral sliced ham today (inspired by you!) and brought it to the Brooklyn Beekeepers Brunch we attended.

Instead of the glaze mix that comes with the ham, we did this one from the National Honey Board's "Home is Where Your Honey Is" cookbook. It was fabulous!

Whiskey and Clove Honeyed Ham

3/4 cup honey
1 1/2 tablespoons bourbon whiskey
1/2 teaspoon ground cloves
1 bone-in fully cooked spiral sliced ham (about 5 lbs)

In small bowl, combine honey, bourbon, and cloves until well blended. Place ham, cut side down, in roasting pan; brush with honey mixture. Cover pan with foil and bake at 275 about one hour until heated through. Remove foil from ham and increase oven temperature to 425. Brush with honey mixture. Bake about 10 minutes or more until ham is golden brown. Remove from oven and place on serving platter. Pour juices over ham. Makes 12 servings.

Note: Two teaspoons vanilla extract may be substituted for the bourbon whiskey.

We used Wild Turkey bourbon. Neither of us like to drink bourbon, so we bought two airplane-size bottles in our local liquor store where winos buy the little bottles :)

We got our ham at Costco, where everything is HUGE. The smallest ham we could find was 8 lbs. So, we doubled the glaze recipe and liberally brushed the glaze on, even between the spiral slices. It was the hit of the brunch!

In fact, some of the Brooklyn crowd plan to ride the LIRR to one of our meetings soon, and join our club!

Best,
Joanne
